The Anchovy Bar The team behind Michelin-starred San Francisco restaurants State Bird Provisions and the Progress is gearing up to open the Anchovy Bar, a West Coast oyster bar and market. Stuart Brioza and Nicole Krasinski originally planned to open the bar in May, but the pandemic set back construction and also forced a slight change in vision. The chefs will still focus on oysters, primarily from British Columbia down to Tomales Bay, and anchovies — October marks the end of the local anchovy season, but the bar will also highlight anchovies from Spain and Italy, as well as ingredients derived from anchovies like fish sauce.
